
Crab Fried Rice
• 3 cups rice, cooked the day before and refrigerated.
• 1/4 cup vegetable oil
• 1/4 cup carrots
• 1/4 cup peas
• 1/4 cup green onion, sliced
• 1/2 tablespoon fresh ginger, peeled and finely chopped
• 1 clove garlic, minced
• 2 tablespoons fish sauce
• 3 tablespoons soy sauce
• 1-1/2 tablespoon lime juice
• 1 teaspoon sugar
• 2 eggs, lightly beaten
• 6 ounces crab meat (I used lump crab).
• salt/pepper to taste
Mix the fish sauce, soy sauce, lime juice and sugar in a small bowl. Set aside.
Heat 1/4 cup vegetable oil in a wok or frying pan. Add peas, carrots, garlic, green onions and ginger. Add rice, follow with liquid mixture and blend well. Fry for 5 minutes or so. Finish by adding eggs and stir fry until the eggs are cooked and are mixed well with the rice. Remove from heat and crab meat.
